Pu Erh is post-fermented tea produced in the Chinese province of Yunnan. After production, which is almost identical to black tea, the leaves are stored in humidity controlled conditions for up to 20 years. Pu Erh has only relatively recently become famous outside of China, where it has been enjoyed for hundreds of years.
