This rare Phoenix Dan Cong oolong tea is harvested in early May from the esteemed Wudong Mountain area in Guangdong province over 1000m at altitude. The term Dan Cong translates as single stem. The tea is harvested from one stem of a single bush from the Phoenix Shuixian varietal, grown with deep roots in misty mountain, mineral-rich soil that help create concentrated flavours. Pickers carefully pluck 3-4 leaves at a time, leaving them to wither outdoors and indoors before dancing the leaves on large bamboo plates. The leaves are then tossed and rolled before being left to rest under sheets and, finally, finished in wood fired ovens. A beautifully fragrant and fruity tea with stunning aromas of mountain flowers, honey, and juicy fruits such as lychees and quinces that create a truly quenching infusion with a lingering sweetness and depth.
